Baijiu (白酒) is the most widely consumed alcoholic beverage in China. Made from the fermentation and distillation of grains such as sorghum, rice and wheat, Baijiu has over 6,000 years of history and is a true symbol of Chinese culture.

Its origins date back to the ancient Xia and Shang dynasties, with simple fermented drinks. Over time, especially from the Han Dynasty (206 BC), the distillation technique and the use of Qu (the on-site fermentation bacteria) emerged, which allowed to create a unique and complex flavor.

During the Tang, Song, Ming and Qing dynasties, Baijiu established itself as a noble drink, present in rituals, banquets and celebrations. Traditional brands such as Fenjiu have their roots in this period.

In the modern era, Baijiu has been promoted as a national symbol and has become a regular presence at official events, weddings and business meetings. It is traditionally served in small glasses as a collective toast to represent respect and unity.
